Ingredients:

  • 3 ripe bananas (approximately 1 cup mashed)
  • 1/3 cup (75 g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 large egg (beaten)
  • 3/4 cup (150 g) granulated sugar
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (60 g) chopped walnuts (or pecans)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the loaf pan by greasing it or lining it with parchment paper.
  3. Mash the ripe bananas in a medium bowl until smooth.
  4. Mix melted butter into the mashed bananas.
  5. Incorporate the beaten egg and vanilla extract into the butter-banana mixture.
  6. Stir in the granulated sugar.
  7. Combine the baking soda and salt in a separate bowl.
  8. Add the dry ingredients (flour mixture) to the wet ingredients and stir gently until just combined—don’t overmix!
  9. Fold in the chopped walnuts.
  10. Pour the batter into the prepared loaf pan and smooth the top.
  11. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  12. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
