Ingredients:
- 3 ripe bananas (approximately 1 cup mashed)
- 1/3 cup (75 g) unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 large egg (beaten)
- 3/4 cup (150 g) granulated sugar
- 1 teaspoon baking soda
- Pinch of salt
- 1 cup (125 g) all-purpose flour
- 1/2 cup (60 g) chopped walnuts (or pecans)
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare the loaf pan by greasing it or lining it with parchment paper.
- Mash the ripe bananas in a medium bowl until smooth.
- Mix melted butter into the mashed bananas.
- Incorporate the beaten egg and vanilla extract into the butter-banana mixture.
- Stir in the granulated sugar.
- Combine the baking soda and salt in a separate bowl.
- Add the dry ingredients (flour mixture) to the wet ingredients and stir gently until just combined—don’t overmix!
- Fold in the chopped walnuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
