Ingredients:

  • 1¼ cups almond flour
  • ¼ cup sugar-free milk chocolate chips (or chocolate chips of choice)
  • 3 tablespoons salted butter (or coconut oil for dairy-free)
  • 1 large egg
  • ⅛ cup monkfruit sweetener (or sweetener of choice)
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon xanthan gum (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in the microwave or on the stovetop in the skillet and transfer to a mixing bowl.
  3. Prepare the skillet by brushing a thin layer of melted butter inside (skip if already used the skillet).
  4. Combine monkfruit sweetener, egg, and vanilla extract into the bowl with melted butter; whisk until frothy.
  5. Mix in almond flour, baking powder, salt, and xanthan gum (if using), stirring until fully integrated.
  6. Fold in the chocolate chips until evenly distributed.
  7. Scoop the dough into the prepared skillet, flattening it out evenly. Add extra chocolate chips on top if desired.
  8. Bake for 18 minutes, checking for doneness at 15 minutes; for a gooier texture, remove at 15 minutes.
