Ingredients:

  • 2 cups grated zucchini (about 2 medium zucchinis, water squeezed out)
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • ½ cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup chocolate chips or dried cranberries (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture using a clean dish towel or cheesecloth.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a large bowl, whisk together granulated sugar, brown sugar, eggs, oil, and vanilla until well combined.
  5. Stir in the grated zucchini into the wet mixture until well distributed.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  7. Fold in any chopped nuts or chocolate chips if using.
  8. Grease and flour your loaf pan or line it with baking parchment.
  9. Transfer the batter into the prepared loaf pan and smooth the top.
  10. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
