- 2 cups grated zucchini (about 2 medium zucchinis, water squeezed out)
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 2 large eggs
- ½ cup vegetable oil (or melted coconut oil)
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts or pecans (optional)
- ½ cup chocolate chips or dried cranberries (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grate the zucchini and squeeze out excess moisture using a clean dish towel or cheesecloth.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a large bowl, whisk together granulated sugar, brown sugar, eggs, oil, and vanilla until well combined.
- Stir in the grated zucchini into the wet mixture until well distributed.
- Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
- Fold in any chopped nuts or chocolate chips if using.
- Grease and flour your loaf pan or line it with baking parchment.
- Transfer the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
