Ingredients:

  • 2 pounds fresh ripe figs, stems removed and quartered
  • 2 cups granulated sugar
  • 1/4 cup lemon juice, freshly squeezed
  • 1 teaspoon ground cinnamon (optional)
  • 2 sterilized pint jars with lids

Instructions:

  1. Rinse and quarter the figs, discarding any damaged parts.
  2. In a large pot, mix the figs, sugar, lemon juice, and cinnamon.
  3. Let the mixture sit for about 30 minutes to allow the figs to release their juices.
  4. Place the pot over medium heat and stir occasionally until the sugar dissolves and the mixture starts to bubble.
  5. Lower the heat and simmer for about 30-40 minutes, stirring frequently, until the mixture thickens.
  6. Pour the hot mixture into sterilized jars, leaving about 1/4 inch of headspace.
  7. Wipe the rims of the jars, place the lids on, and screw on the bands.
  8. Allow to cool completely at room temperature before storing.
