Ingredients:
- 1/2 cup blueberry juice
- 3 tbsp unflavored gelatin powder
- 2 tbsp honey
- 1 tbsp lemon juice
- 1/4 tsp citric acid
- 1 tsp cornstarch
- 1 tbsp water
- 1 drop blue food coloring
Instructions:
- Pour the cold blueberry juice into the saucepan and sprinkle the gelatin powder evenly over the surface. Let it sit undisturbed for 5–10 minutes to bloom.
- Place the saucepan over low heat. Stir constantly with a whisk until the gelatin has completely dissolved and the mixture is smooth. Stir in the honey and lemon juice, ensuring the mixture does not reach a rolling boil.
- In a small bowl, mix the cornstarch and cold water to create a smooth slurry. Slowly whisk this slurry into the warm gummy mixture to create the opaque matte finish.
- Stir in the citric acid and blue food coloring.
- Using a dropper or spoon, pour the mixture into gummy molds or a parchment-lined baking tray to a thickness of 1/4 inch. Skim off any white foam from the surface.
- Place in the refrigerator for at least 2 hours or until firm to the touch.
