Ingredients:

  • 1/2 cup blueberry juice
  • 3 tbsp unflavored gelatin powder
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1/4 tsp citric acid
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1 drop blue food coloring

Instructions:

  1. Pour the cold blueberry juice into the saucepan and sprinkle the gelatin powder evenly over the surface. Let it sit undisturbed for 5–10 minutes to bloom.
  2. Place the saucepan over low heat. Stir constantly with a whisk until the gelatin has completely dissolved and the mixture is smooth. Stir in the honey and lemon juice, ensuring the mixture does not reach a rolling boil.
  3. In a small bowl, mix the cornstarch and cold water to create a smooth slurry. Slowly whisk this slurry into the warm gummy mixture to create the opaque matte finish.
  4. Stir in the citric acid and blue food coloring.
  5. Using a dropper or spoon, pour the mixture into gummy molds or a parchment-lined baking tray to a thickness of 1/4 inch. Skim off any white foam from the surface.
  6. Place in the refrigerator for at least 2 hours or until firm to the touch.
