Ingredients:

  • 1/2 cup (115g) unsalted butter
  • 1/2 cup (170g) honey
  • 1/4 cup (60ml) creamy peanut butter
  • 2 cups (180g) rolled oats
  • 2 cups (60g) crispy rice cereal
  • 1/4 tsp (1.5g) salt
  • 1 tsp (5ml) vanilla extract
  • 12 oz (340g) semi-sweet chocolate chips
  • 2 tbsp (30ml) coconut oil
  • 1/4 cup (40g) mini M&M's

Instructions:

  1. In a saucepan over medium heat, combine butter, honey, and nut butter. Stir constantly until the mixture reaches a gentle bubble and is fully homogenized.
  2. Remove from heat. Quickly stir in the vanilla, salt, rolled oats, and crispy rice cereal. Mix until every grain is coated.
  3. Line an 8x8 inch baking pan with parchment paper. Transfer the mixture into the pan and use the bottom of a heavy glass to press the granola down firmly.
  4. Place the pan in the refrigerator for at least 60 minutes to set the structure.
  5. Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring between, until smooth.
  6. Lift the chilled granola block out of the pan using the parchment paper and slice into 12 equal rectangles.
  7. Dip each bar into the melted chocolate or pour the chocolate over the top, then garnish with mini M&M's before the chocolate sets.
