Ingredients:
- 1/2 cup (115g) unsalted butter
- 1/2 cup (170g) honey
- 1/4 cup (60ml) creamy peanut butter
- 2 cups (180g) rolled oats
- 2 cups (60g) crispy rice cereal
- 1/4 tsp (1.5g) salt
- 1 tsp (5ml) vanilla extract
- 12 oz (340g) semi-sweet chocolate chips
- 2 tbsp (30ml) coconut oil
- 1/4 cup (40g) mini M&M's
Instructions:
- In a saucepan over medium heat, combine butter, honey, and nut butter. Stir constantly until the mixture reaches a gentle bubble and is fully homogenized.
- Remove from heat. Quickly stir in the vanilla, salt, rolled oats, and crispy rice cereal. Mix until every grain is coated.
- Line an 8x8 inch baking pan with parchment paper. Transfer the mixture into the pan and use the bottom of a heavy glass to press the granola down firmly.
- Place the pan in the refrigerator for at least 60 minutes to set the structure.
- Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring between, until smooth.
- Lift the chilled granola block out of the pan using the parchment paper and slice into 12 equal rectangles.
- Dip each bar into the melted chocolate or pour the chocolate over the top, then garnish with mini M&M's before the chocolate sets.
