Ingredients:

  • Tablespoons Ground Annatto (Achiote)
  • Tablespoon Ground Cumin
  • Tablespoon Ground Coriander
  • Tablespoon Garlic Powder
  • Tablespoon Onion Powder
  • Teaspoons Dried Oregano (Mexican preferred)
  • Teaspoon Turmeric Powder
  • Teaspoon Black Pepper (freshly ground)
  • Teaspoon Fine Sea Salt
  • Teaspoon MSG (Optional)
  • /2 Teaspoon Ground White Pepper

Instructions:

  1. If using whole cumin and coriander seeds, gently toast them in a dry skillet over medium-low heat until fragrant (about 2–3 minutes). Allow them to cool completely.
  2. If necessary, grind the toasted seeds in a spice grinder or mortar and pestle until they reach a fine powder consistency.
  3. In a medium bowl, combine the ground annatto, ground cumin, ground coriander, garlic powder, onion powder, oregano, turmeric, black pepper, salt, MSG (if using), and white pepper.
  4. Whisk vigorously for at least 1 minute to ensure thorough and even distribution of all colours and flavours throughout the Sazón Seasoning blend.
  5. Taste a tiny pinch of the seasoning to check flavour balance, adjusting salt or pepper as necessary for your preference.
  6. Transfer the finished Sazón blend immediately into a clean, dry, airtight glass jar. Label clearly with the date for optimal storage.
