Ingredients:
- 4 cups (480g) powdered sugar, sifted
- 3 tbsp whole milk
- 2 tbsp light corn syrup
- 1 tsp clear vanilla extract
- 1/4 tsp almond extract
- 1 pinch fine sea salt
- gel food coloring as needed
Instructions:
- Sift the powdered sugar into a medium glass mixing bowl to remove all lumps. Add the whole milk and whisk slowly until a very thick, paste-like consistency forms.
- Add the light corn syrup, vanilla extract, almond extract, and a pinch of salt. Whisk until the mixture is completely smooth and achieves a high-gloss finish.
- Perform a '10-second test' by lifting the whisk and letting the icing drizzle back into the bowl. If the ribbon of icing levels out in exactly 10 seconds, it is ready. If it is too thick, add milk by the drop; if too thin, add more sifted powdered sugar.
- Divide into bowls and stir in gel food coloring as desired. Transfer to piping bags or squeeze bottles for decorating.
