Ingredients:

  • 1 (8-10 lb) bone-in spiral sliced ham
  • 1 cup (340g) honey
  • 1 cup (200g) dark brown sugar
  • 1/4 cup (60g) Dijon mustard
  • 1/4 cup (56g) unsalted butter
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 cup apple cider

Instructions:

  1. Take the ham out of the fridge 1 hour before you start. Note: This helps the meat cook evenly so the outside doesn't dry out before the middle is warm.
  2. Preheat your oven to 165°C (325°F).
  3. Place the ham cut side down on your roasting rack. Pour the apple cider into the bottom of the pan.
  4. Wrap the ham tightly in two layers of foil. Make sure it's sealed. Bake for 12–15 minutes per pound until the center hits 43°C (110°F).
  5. Mix your honey, dark brown sugar, mustard, butter, and spices in a saucepan over medium low heat.
  6. Simmer the glaze for about 8 minutes until it looks like thick maple syrup.
  7. Pull the ham out and crank the oven to 220°C (425°F). Carefully unwrap the foil — watch out for the steam!
  8. Brush half the glaze all over and between the slices. Bake for 10-15 minutes until the surface starts to sizzle and darken.
  9. Every 5 minutes, brush on more glaze. It will start to look like liquid gold.
  10. Let it rest for at least 15 minutes before carving. until the juices settle back into the meat.
