Ingredients:
- 1 (8-10 lb) bone-in spiral sliced ham
- 1 cup (340g) honey
- 1 cup (200g) dark brown sugar
- 1/4 cup (60g) Dijon mustard
- 1/4 cup (56g) unsalted butter
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 cup apple cider
Instructions:
- Take the ham out of the fridge 1 hour before you start. Note: This helps the meat cook evenly so the outside doesn't dry out before the middle is warm.
- Preheat your oven to 165°C (325°F).
- Place the ham cut side down on your roasting rack. Pour the apple cider into the bottom of the pan.
- Wrap the ham tightly in two layers of foil. Make sure it's sealed. Bake for 12–15 minutes per pound until the center hits 43°C (110°F).
- Mix your honey, dark brown sugar, mustard, butter, and spices in a saucepan over medium low heat.
- Simmer the glaze for about 8 minutes until it looks like thick maple syrup.
- Pull the ham out and crank the oven to 220°C (425°F). Carefully unwrap the foil — watch out for the steam!
- Brush half the glaze all over and between the slices. Bake for 10-15 minutes until the surface starts to sizzle and darken.
- Every 5 minutes, brush on more glaze. It will start to look like liquid gold.
- Let it rest for at least 15 minutes before carving. until the juices settle back into the meat.
