Ingredients:

  • 3-inch piece fresh ginger root (approx. 50g), scrubbed clean
  • 2.5 cups filtered water
  • 0.5 large lemon, juiced
  • 1.5 tbsp raw honey
  • 1 small cinnamon stick

Instructions:

  1. Scrub the 50g ginger root under cold water. Slice the ginger into coins about 3mm thick. The thinner the slice, the more zing you'll get.
  2. Place the ginger slices and 1 cinnamon stick into a saucepan.
  3. Pour in the 2.5 cups of filtered water. Bring the water to a boil over medium high heat. Reduce the heat to low and let it simmer for 15 minutes until the water turns a beautiful golden hue.
  4. Remove the pan from the heat and let it sit for 2 minutes. Stir in the 0.5 large lemon, juiced. Add the 1.5 tbsp raw honey and stir until the honey is completely dissolved and invisible.
  5. Pour the tea through a fine mesh strainer into your favorite mugs.
