Ingredients:
- 3-inch piece fresh ginger root (approx. 50g), scrubbed clean
- 2.5 cups filtered water
- 0.5 large lemon, juiced
- 1.5 tbsp raw honey
- 1 small cinnamon stick
Instructions:
- Scrub the 50g ginger root under cold water. Slice the ginger into coins about 3mm thick. The thinner the slice, the more zing you'll get.
- Place the ginger slices and 1 cinnamon stick into a saucepan.
- Pour in the 2.5 cups of filtered water. Bring the water to a boil over medium high heat. Reduce the heat to low and let it simmer for 15 minutes until the water turns a beautiful golden hue.
- Remove the pan from the heat and let it sit for 2 minutes. Stir in the 0.5 large lemon, juiced. Add the 1.5 tbsp raw honey and stir until the honey is completely dissolved and invisible.
- Pour the tea through a fine mesh strainer into your favorite mugs.
