Ingredients:

  • 2 to 3 ripe bananas (about 1 cup mashed)
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (100g) packed brown sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (70g) chopped macadamia nuts
  • 1/4 cup (40g) shredded coconut (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the loaf pan.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the melted butter until well combined.
  4. Add the brown sugar, beaten egg, and vanilla extract; mix until incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture; stir gently until just combined.
  7. Fold in the macadamia nuts and shredded coconut (if using).
  8. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  9. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before transferring to a rack to cool completely.
