Ingredients:
- 2 to 3 ripe bananas (about 1 cup mashed)
- 1/2 cup (115g) unsalted butter, melted
- 1/2 cup (100g) packed brown sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (125g) all-purpose flour
- 1/2 cup (70g) chopped macadamia nuts
- 1/4 cup (40g) shredded coconut (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and grease the loaf pan.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Stir in the melted butter until well combined.
- Add the brown sugar, beaten egg, and vanilla extract; mix until incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture; stir gently until just combined.
- Fold in the macadamia nuts and shredded coconut (if using).
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a rack to cool completely.
