Ingredients:
- 3 lbs pork shoulder, cut into large chunks
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 1 orange, juiced (about ½ cup or 120 ml of juice)
- 1 lime, juiced (about ¼ cup or 60 ml of juice)
- Additional salt for seasoning after broiling (to taste)
Instructions:
- Cut pork shoulder into large chunks and pat dry. Season with salt, pepper, cumin, oregano, and smoked paprika.
- Set Instant Pot to sauté mode; heat olive oil. Add chopped onion; sauté until softened. Stir in minced garlic; sauté until fragrant.
- Add seasoned pork chunks to the Instant Pot. Pour in orange and lime juice. Lock the lid and set to high pressure for 60 minutes.
- Allow natural pressure release for 10 minutes, then perform a quick release.
- Use a slotted spoon to transfer the pork to a baking sheet; shred using two forks. Broil in the oven for 5-10 minutes until edges are crispy, checking frequently.
- Sprinkle with additional salt if needed. Serve warm with tortillas or your favorite accompaniments.
