Ingredients:

  • 3 lbs pork shoulder, cut into large chunks
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 orange, juiced (about ½ cup or 120 ml of juice)
  • 1 lime, juiced (about ¼ cup or 60 ml of juice)
  • Additional salt for seasoning after broiling (to taste)

Instructions:

  1. Cut pork shoulder into large chunks and pat dry. Season with salt, pepper, cumin, oregano, and smoked paprika.
  2. Set Instant Pot to sauté mode; heat olive oil. Add chopped onion; sauté until softened. Stir in minced garlic; sauté until fragrant.
  3. Add seasoned pork chunks to the Instant Pot. Pour in orange and lime juice. Lock the lid and set to high pressure for 60 minutes.
  4. Allow natural pressure release for 10 minutes, then perform a quick release.
  5. Use a slotted spoon to transfer the pork to a baking sheet; shred using two forks. Broil in the oven for 5-10 minutes until edges are crispy, checking frequently.
  6. Sprinkle with additional salt if needed. Serve warm with tortillas or your favorite accompaniments.
