- 1 cup (225 g) unsalted butter, softened
- 1 cup (200 g) brown sugar, packed
- 1/2 cup (100 g) granulated sugar
- 2 large eggs
- 1 teaspoon (5 ml) vanilla extract
- 2 1/4 cups (280 g) all-purpose flour
- 1 teaspoon (6 g) baking soda
- 1/2 teaspoon (3 g) salt
- 1 cup (175 g) butterscotch chips
- 1/2 cup (75 g) chopped nuts (optional, e.g., pecans or walnuts)
Instructions:
- Preheat oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy.
- Add eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.
- Whisk together flour, baking soda, and salt in a separate bowl.
- Gradually incorporate dry ingredients into the wet mixture until just combined.
- Fold in butterscotch chips and chopped nuts (if using).
- Chill the dough in the refrigerator for 30 minutes.
- Scoop tablespoonfuls of dough onto a prepared baking sheet, leaving space between cookies.
- Bake for 12-15 minutes or until the edges are golden brown.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
