  • 1 cup (225 g) unsalted butter, softened
  • 1 cup (200 g) brown sugar, packed
  • 1/2 cup (100 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract
  • 2 1/4 cups (280 g) all-purpose flour
  • 1 teaspoon (6 g) baking soda
  • 1/2 teaspoon (3 g) salt
  • 1 cup (175 g) butterscotch chips
  • 1/2 cup (75 g) chopped nuts (optional, e.g., pecans or walnuts)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy.
  3. Add eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.
  4. Whisk together flour, baking soda, and salt in a separate bowl.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined.
  6. Fold in butterscotch chips and chopped nuts (if using).
  7. Chill the dough in the refrigerator for 30 minutes.
  8. Scoop tablespoonfuls of dough onto a prepared baking sheet, leaving space between cookies.
  9. Bake for 12-15 minutes or until the edges are golden brown.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
