Ingredients:
- 2 cups (192g) superfine almond flour
- 1 cup (245g) pumpkin puree
- 1/2 cup (96g) granulated monk fruit sweetener
- 2 large eggs
- 1/4 cup (57g) melted unsalted butter
- 1 tsp (5g) pumpkin pie spice
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese, softened
- 1/4 cup (57g) unsalted butter, softened
- 1/2 cup (60g) powdered monk fruit sweetener
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) heavy cream
Instructions:
- Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, whisk together the almond flour, granulated monk fruit sweetener, pumpkin pie spice, baking soda, and salt.
- In a separate bowl, beat the eggs, pumpkin puree, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix to avoid a dense texture.
- Spread the batter evenly into the prepared pan and bake for 22–25 minutes, or until the edges are slightly golden and the center springs back when touched.
- Remove from oven and allow the bars to cool completely in the pan before frosting.
- Beat the softened cream cheese and butter together until pale and fluffy.
- Gradually add the powdered monk fruit sweetener and vanilla extract. Whisk in heavy cream if needed for a smoother consistency.
- Spread the frosting evenly over the cooled pumpkin bars.
