Ingredients:
- 1 cup (115g) pecans, finely ground
- 2 tbsp (25g) melted unsalted butter
- 2 tbsp (25g) allulose or powdered erythritol
- 1/4 tsp (1g) salt
- 8 oz (225g) cream cheese, softened
- 1/2 cup (115g) pumpkin puree
- 1/2 cup (100g) allulose or powdered sweetener
- 2 large eggs, room temperature
- 1 tsp (2g) pumpkin pie spice
- 1/2 tsp (1g) ground cinnamon
- 1 tsp (5ml) vanilla extract
- 4 oz (115g) cream cheese, softened
- 2 tbsp (30g) melted butter
- 1/4 cup (50g) powdered sweetener
- 1 tsp (5ml) heavy cream
Instructions:
- Preheat your oven to 325°F (160°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a mixing bowl, combine the ground pecans, melted butter, sweetener, and salt. Stir until the mixture resembles wet sand.
- Press the pecan mixture firmly into the bottom of the prepared pan using the back of a spoon.
- Bake the crust for 8–10 minutes until golden and fragrant. Remove from oven and let cool slightly.
- Using a mixer, beat the softened cream cheese, pumpkin puree, and sweetener until smooth and homogenous.
- Add the eggs one at a time, beating well after each addition. Stir in the pumpkin pie spice, ground cinnamon, and vanilla extract.
- Pour the pumpkin filling over the pre-baked crust and smooth the top with a spatula.
- Bake for 20–25 minutes, or until the edges are set but the center still has a slight jiggle.
- Allow the bars to cool completely at room temperature, then refrigerate for a minimum of 4 hours.
- Prepare the frosting by beating together softened cream cheese, melted butter, powdered sweetener, and heavy cream until light and fluffy.
- Spread the frosting evenly over the chilled cheesecake bars and cut into 16 equal squares.
