Ingredients:
- 1 cup (245g) pumpkin puree
- 2 cups (216g) superfine almond flour
- 1/2 cup (96g) granulated monk fruit sweetener
- 1/2 cup (85g) sugar-free chocolate chips
- 1 tsp (5g) pumpkin pie spice
- 1/4 tsp (1.5g) baking soda
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the pumpkin puree and sweetener, stirring until the mixture is smooth.
- Add the almond flour and baking soda, stirring with a spatula until a thick, cohesive dough forms.
- Fold in the sugar-free chocolate chips and pumpkin pie spice until evenly distributed.
- Scoop approximately 2 tablespoons of dough per cookie onto the tray and slightly flatten the tops with the back of a spoon.
- Bake for 12–15 minutes until edges are set and tops feel springy.
- Cool on the pan for 5 minutes before transferring to a wire rack.
