Ingredients:
- 2 cups (200g) super-fine almond flour
- 1/2 cup (100g) granulated monk fruit sweetener
- 1 tbsp (12g) pumpkin pie spice
- 1 tsp (5g) baking powder
- 1/4 tsp (1.5g) salt
- 3 large eggs
- 3/4 cup (180g) canned pumpkin puree
- 1/4 cup (60ml) heavy cream
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese, softened
- 4 tbsp (56g) unsalted butter, softened
- 1/2 cup (50g) powdered monk fruit sweetener
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C) and line a standard 18-slot muffin tin with paper liners.
- In a medium bowl, whisk together the almond flour, granulated monk fruit sweetener, pumpkin pie spice, baking powder, and salt until no large clumps remain.
- In a large bowl, beat the eggs, pumpkin puree, heavy cream, and vanilla extract until the mixture is smooth and pale orange.
- Slowly fold the dry ingredients into the wet mixture using a spatula until just combined; do not over-mix.
- Divide the batter evenly among the 18 liners, filling each about 3/4 full.
- Bake for 25-30 minutes until a toothpick inserted into the center comes out clean.
- Prepare frosting by beating softened cream cheese and butter together, then adding powdered monk fruit sweetener, vanilla extract, and optional heavy cream until fluffy.
- Allow cupcakes to cool completely before frosting.
