Ingredients:
- 2 cups (192g) super-fine almond flour
- ½ cup (120g) pumpkin puree
- ½ cup (96g) powdered erythritol
- 3 tbsp (42g) melted unsalted butter
- 1 large (50g) egg
- 1 tsp (5ml) vanilla extract
- 1 tbsp (8g) pumpkin pie spice
- ½ tsp (3g) baking soda
- ¼ tsp (1.5g) fine sea salt
- 2 tbsp (12g) melted butter
- ¼ cup (30g) powdered erythritol
- 1 tbsp (15ml) heavy cream
- ½ tsp (2g) ground cinnamon
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together melted butter and sweetener until smooth.
- Beat in the egg, pumpkin puree, and vanilla extract until the mixture is velvety.
- In a separate small bowl, stir together almond flour, pumpkin pie spice, baking soda, and salt; fold into the wet mixture until a thick dough forms.
- Scoop 1 tablespoon of dough per cookie onto the baking sheet and gently press the tops down with a spoon or fork.
- Bake for 12–15 minutes until edges are set and tops spring back. Cool on the pan for 5 minutes before transferring to a wire rack.
- Optional: Combine melted butter, powdered sweetener, heavy cream, and cinnamon in a small saucepan to create a glaze; drizzle over cooled cookies.
