Ingredients:
- 1 ½ cups (150g) graham cracker crumbs, finely crushed
- 6 tablespoons (85g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar
- ⅛ teaspoon ground cinnamon (optional)
- 8 ounces (225g) cream cheese, softened
- ½ cup (100g) granulated sugar
- ¼ cup (60ml) heavy cream, cold
- ¼ cup (60ml) Key lime juice
- 1 teaspoon Key lime zest
- ½ teaspoon vanilla extract
- Key lime slices (optional)
- Whipped cream (optional)
- Extra graham cracker crumbs (optional)
Instructions:
- Combine graham cracker crumbs, melted butter, sugar, and cinnamon (if using) in a medium bowl. Mix well until evenly moistened.
- In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
- Gradually beat in heavy cream, Key lime juice, Key lime zest, and vanilla extract until well combined and smooth. Avoid over-mixing.
- Layer graham cracker crumble and cheesecake filling in parfait glasses, starting with the graham cracker crumble at the bottom. Repeat layers until glasses are filled.
- Cover the parfaits and refrigerate for at least 30 minutes to allow the filling to set slightly.
- Before serving, garnish Key Lime Cheesecake Parfaits with Key lime slices, whipped cream, and/or extra graham cracker crumbs, if desired.
