Ingredients:
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh orange juice
- 2 tbsp fresh lime juice
- 2 tbsp honey
- 1 tbsp soy sauce
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground allspice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1.5 lbs boneless, skinless chicken breasts
- 2 tbsp fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions:
- Combine olive oil, orange juice, lime juice, honey, soy sauce, minced garlic, cumin, allspice, salt, and black pepper in a gallon-sized zip-top bag or glass bowl.
- Pound the chicken breasts to a uniform 1/2 inch thickness using a meat mallet.
- Add chicken to the marinade, massage to coat, seal and refrigerate for 30 minutes.
- Preheat grill to medium-high heat.
- Remove chicken from marinade and sear on the grill for 5–6 minutes per side until the internal temperature hits 160°F (71°C).
- Transfer chicken to a plate, tent loosely with foil, and let rest for 5 minutes to reach a final internal temperature of 165°F (74°C).
- Garnish with chopped cilantro and serve with lime wedges.
