Ingredients:

  • 1 large (10 inch) whole wheat tortilla (60g)
  • 2 tbsp (30g) whipped cream cheese
  • 60g low sodium deli turkey breast, thinly sliced
  • 40g mild cheddar cheese, sliced
  • 1/4 cup (15g) fresh baby spinach, stems removed
  • 1/2 cup (75g) English cucumber, sliced
  • 1/2 cup (75g) fresh strawberries
  • 1 tbsp (15g) sunflower seeds
  • 30g mild salsa

Instructions:

  1. Place the 10 inch whole wheat tortilla on a plate and microwave for 5 seconds until just barely warm and flexible.
  2. Spread 2 tbsp of whipped cream cheese across the entire surface. Note: Leave a 1/2 inch border at the very top edge to act as the final glue.
  3. Place the 1/4 cup baby spinach in a single layer over the bottom two thirds of the tortilla.
  4. Lay the 60g deli turkey flat over the spinach. Ensure the turkey is dry to prevent the wrap from sliding later.
  5. Arrange the 40g cheddar cheese slices over the turkey.
  6. Fold the bottom edge tightly over the fillings and begin rolling upward until you feel tension.
  7. Finish the roll, pressing the top clean cream cheese edge firmly against the body of the wrap.
  8. Place the wrap in the fridge for 5 minutes until the cream cheese firmens.
  9. Using a serrated knife, cut the wrap into 1 inch thick pinwheels.
  10. Place the pinwheels in the main compartment, then tuck in the cucumber, strawberries, and sunflower seeds.
