Ingredients:

  • 2 tablespoons ground allspice (24g)
  • 2 tablespoons dried thyme (8g)
  • 1 tablespoon ground ginger (6g)
  • 1 tablespoon onion powder (7g)
  • 1 tablespoon garlic powder (6g)
  • 1 tablespoon brown sugar, packed (12g)
  • 2 teaspoons smoked paprika (4g)
  • 2 teaspoons cayenne pepper (4g)
  • 1 teaspoon ground cinnamon (2g)
  • 1 teaspoon ground nutmeg (2g)
  • 1 teaspoon black pepper (2g)
  • 1 teaspoon salt (6g)
  • ½ teaspoon ground cloves (1g)
  • ¼ - ½ teaspoon Scotch bonnet pepper flakes or powder (adjust to taste and heat preference) (0.5g - 1g)

Instructions:

  1. In a mixing bowl, combine allspice, thyme, ginger, onion powder, garlic powder, brown sugar, smoked paprika, cayenne pepper, cinnamon, nutmeg, black pepper, salt, cloves, and Scotch bonnet pepper flakes (or powder).
  2. Whisk all ingredients together until well combined and evenly distributed. Make sure there are no clumps.
  3. Taste a small amount of the seasoning and adjust the heat level (cayenne or Scotch bonnet) or sweetness (brown sugar) to your preference. Safety Note: Be very careful when tasting anything containing chili powder, start with a very small amount!
  4. Transfer the Jerk Chicken Seasoning to an airtight container or jar. Store in a cool, dry place away from direct sunlight.
