Ingredients:
- 2 tablespoons ground allspice (24g)
- 2 tablespoons dried thyme (8g)
- 1 tablespoon ground ginger (6g)
- 1 tablespoon onion powder (7g)
- 1 tablespoon garlic powder (6g)
- 1 tablespoon brown sugar, packed (12g)
- 2 teaspoons smoked paprika (4g)
- 2 teaspoons cayenne pepper (4g)
- 1 teaspoon ground cinnamon (2g)
- 1 teaspoon ground nutmeg (2g)
- 1 teaspoon black pepper (2g)
- 1 teaspoon salt (6g)
- ½ teaspoon ground cloves (1g)
- ¼ - ½ teaspoon Scotch bonnet pepper flakes or powder (adjust to taste and heat preference) (0.5g - 1g)
Instructions:
- In a mixing bowl, combine allspice, thyme, ginger, onion powder, garlic powder, brown sugar, smoked paprika, cayenne pepper, cinnamon, nutmeg, black pepper, salt, cloves, and Scotch bonnet pepper flakes (or powder).
- Whisk all ingredients together until well combined and evenly distributed. Make sure there are no clumps.
- Taste a small amount of the seasoning and adjust the heat level (cayenne or Scotch bonnet) or sweetness (brown sugar) to your preference. Safety Note: Be very careful when tasting anything containing chili powder, start with a very small amount!
- Transfer the Jerk Chicken Seasoning to an airtight container or jar. Store in a cool, dry place away from direct sunlight.
