Ingredients:

  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup packed brown sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp salt
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 0.5 cup sour cream
  • 1 tsp vanilla extract
  • 0.5 cup unsalted butter, melted
  • 0.5 cup packed brown sugar
  • 1 cup sweetened shredded coconut

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, oats, brown sugar, baking soda, cinnamon, and salt.
  3. Stir in the melted butter, eggs, sour cream, and vanilla until the batter is smooth and mahogany-hued.
  4. Spread the mixture evenly into a prepared 9x13 inch baking pan.
  5. Bake in the center rack for 30–35 minutes, or until the edges pull slightly away from the sides and a toothpick inserted into the center comes out with a few moist crumbs.
  6. While the cake is hot, mix the melted butter, brown sugar, and coconut in a small bowl.
  7. Sprinkle the coconut mixture evenly over the top of the baked cake.
  8. Switch oven to Broil, place pan on the top rack, and broil for 2–4 minutes until the coconut is golden-brown and nutty.
