Ingredients:
- 1.5 cups all-purpose flour
- 1 cup rolled oats
- 1 cup packed brown sugar
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 0.5 tsp salt
- 0.5 cup unsalted butter, melted
- 2 large eggs
- 0.5 cup sour cream
- 1 tsp vanilla extract
- 0.5 cup unsalted butter, melted
- 0.5 cup packed brown sugar
- 1 cup sweetened shredded coconut
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, oats, brown sugar, baking soda, cinnamon, and salt.
- Stir in the melted butter, eggs, sour cream, and vanilla until the batter is smooth and mahogany-hued.
- Spread the mixture evenly into a prepared 9x13 inch baking pan.
- Bake in the center rack for 30–35 minutes, or until the edges pull slightly away from the sides and a toothpick inserted into the center comes out with a few moist crumbs.
- While the cake is hot, mix the melted butter, brown sugar, and coconut in a small bowl.
- Sprinkle the coconut mixture evenly over the top of the baked cake.
- Switch oven to Broil, place pan on the top rack, and broil for 2–4 minutes until the coconut is golden-brown and nutty.
