Ingredients:

  • 1 ½ cups (150g) graham cracker crumbs
  • 6 tablespoons (85g) unsalted butter, melted
  • 1 (14 ounce / 397g) can sweetened condensed milk
  • ½ cup (120ml) key lime juice, fresh or bottled
  • 8 ounces (226g) cream cheese, softened
  • 1 teaspoon (5ml) lime zest

Instructions:

  1. Combine graham cracker crumbs and melted butter in a bowl. Press firmly into the bottom and up the sides of the pie plate.
  2. In a large bowl, beat softened cream cheese until smooth.
  3. Gradually add sweetened condensed milk to the cream cheese, mixing until well combined.
  4. Stir in key lime juice and lime zest until the filling is smooth and slightly thickened.
  5. Pour the filling into the prepared graham cracker crust. Cover with plastic wrap and chill in the refrigerator for at least 4 hours, or preferably overnight, until set.
  6. Slice and serve chilled. Garnish with whipped cream and lime slices, if desired.
