Ingredients:

  • 1 tbsp olive oil (15 ml)
  • 1 lb ground turkey (450g), preferably lean (93% or higher)
  • 1 medium yellow onion, finely chopped (approx. 1 cup, 150g)
  • 2 cloves garlic, minced (approx. 1 tsp, 5g)
  • 1 packet (approx. 1 oz/30g) taco seasoning
  • 1/2 cup water (120 ml)
  • 1/4 cup tomato paste (60g)
  • 1/4 teaspoon kosher salt (1.5g), or to taste
  • 1/4 teaspoon freshly ground black pepper (0.5g), or to taste
  • 1 head romaine lettuce, leaves separated and washed
  • 1 avocado, diced (optional)
  • 1/2 cup cherry tomatoes, halved (75g) (optional)
  • 1/4 cup red onion, thinly sliced (30g) (optional)
  • 1/4 cup chopped cilantro (10g) (optional)
  • 1/2 cup shredded cheddar cheese (50g), or Monterey Jack (optional)
  • Sour cream or Greek yogurt (optional)
  • Hot sauce (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  2. Add ground turkey to the skillet and break it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes, draining off any excess fat.
  3. Stir in taco seasoning, water, tomato paste, salt, and pepper. Bring to a simmer, then reduce heat to low and cook for 10 minutes, stirring occasionally, until the sauce has thickened slightly.
  4. Arrange lettuce leaves on a platter. Spoon the seasoned turkey mixture into each lettuce cup.
  5. Top with your favorite taco toppings (avocado, tomatoes, red onion, cilantro, cheese, sour cream, hot sauce). Serve immediately.
