Ingredients:

  • 1 cup (200g) Granulated Sugar
  • 1 cup (240ml) Water
  • 2 cups (packed) Fresh Lemon Balm Leaves, roughly chopped

Instructions:

  1. In a small saucepan, combine sugar and water.
  2. Over medium heat, stir constantly until sugar is completely dissolved. Avoid boiling!
  3. Remove from heat and stir in the chopped lemon balm leaves. Ensure the leaves are submerged in the syrup.
  4. Cover the saucepan and let the mixture steep for at least 30 minutes (or up to 2 hours) to allow the lemon balm flavor to infuse. (Longer steeping = stronger flavor).
  5. Strain the syrup through a fine-mesh strainer or cheesecloth-lined sieve to remove the lemon balm leaves. Discard the leaves.
  6. Pour the syrup into a sterilized jar or bottle. Seal tightly and store in the refrigerator.
