Ingredients:
- 1 cup (200g) Granulated Sugar
- 1 cup (240ml) Water
- 2 cups (packed) Fresh Lemon Balm Leaves, roughly chopped
Instructions:
- In a small saucepan, combine sugar and water.
- Over medium heat, stir constantly until sugar is completely dissolved. Avoid boiling!
- Remove from heat and stir in the chopped lemon balm leaves. Ensure the leaves are submerged in the syrup.
- Cover the saucepan and let the mixture steep for at least 30 minutes (or up to 2 hours) to allow the lemon balm flavor to infuse. (Longer steeping = stronger flavor).
- Strain the syrup through a fine-mesh strainer or cheesecloth-lined sieve to remove the lemon balm leaves. Discard the leaves.
- Pour the syrup into a sterilized jar or bottle. Seal tightly and store in the refrigerator.
