Ingredients:
- 4 boneless, skinless chicken breasts (approx. 170g each)
- 60ml fresh lemon juice
- 60ml extra virgin olive oil
- 4 cloves fresh garlic, minced
- 5g dried oregano
- 5g sea salt
- 2g cracked black pepper
- 5ml honey or maple syrup
Instructions:
- Place chicken breasts between two sheets of plastic wrap and gently pound the thicker end with a mallet until the breast is of uniform thickness.
- Combine lemon juice, olive oil, minced garlic, oregano, salt, pepper, and honey in a zip-top bag. Add chicken, seal, and shake. Marinate for at least 15 minutes at room temperature or up to 4 hours in the fridge.
- Preheat grill to medium-high heat. Grill chicken for 5-7 minutes per side until a mahogany-colored crust forms.
- Remove chicken when internal temperature hits 160°F (71°C). Transfer to a plate and tent loosely with foil for 5 minutes to reach a final temperature of 165°F (74°C).
