Ingredients:
- 4 (6-ounce/170g) mahi-mahi fillets, skin off
- 2 tablespoons (30ml) olive oil
- 1 lemon, zested and juiced (reserve half the lemon for squeezing after baking)
- 2 cloves garlic, minced
- 2 tablespoons (4g) fresh parsley, chopped
- 1 tablespoon (2g) fresh thyme leaves
- 1/2 teaspoon (2g) sea salt, or to taste
- 1/4 teaspoon (1g) black pepper, or to taste
- 2 tablespoons (30g) unsalted butter, cut into small pieces
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease the baking dish.
- In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, parsley, thyme, salt, and pepper.
- Place mahi-mahi fillets in the prepared baking dish. Drizzle the lemon-herb marinade evenly over the fillets, ensuring they are well coated.
- Distribute the butter pieces evenly over the top of the fish fillets.
- Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Squeeze the reserved lemon half over the baked mahi-mahi before serving.
