Ingredients:

  • 1 1/2 cups (192g) all-purpose flour
  • 3 tablespoons (36g) granulated sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (360ml) buttermilk, plus 2 tablespoons if needed
  • 2 large eggs
  • 3 tablespoons (42g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract

Instructions:

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.
  3. Gently pour the wet ingredients into the dry ingredients. Use a spatula to just combine until mostly moistened. A few lumps are perfectly okay! Do not overmix.
  4. Heat a griddle or large non-stick skillet over medium heat (around 350°F/175°C). Lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes, or until bubbles appear on the surface and the edges look set.
  7. Flip the pancakes and cook for another 2-3 minutes, or until golden brown.
  8. Serve warm with your favorite toppings.
