Ingredients:
- 1 1/2 cups (192g) all-purpose flour
- 3 tablespoons (36g) granulated sugar
- 3 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups (360ml) buttermilk, plus 2 tablespoons if needed
- 2 large eggs
- 3 tablespoons (42g) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
Instructions:
- Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.
- Gently pour the wet ingredients into the dry ingredients. Use a spatula to just combine until mostly moistened. A few lumps are perfectly okay! Do not overmix.
- Heat a griddle or large non-stick skillet over medium heat (around 350°F/175°C). Lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes, or until bubbles appear on the surface and the edges look set.
- Flip the pancakes and cook for another 2-3 minutes, or until golden brown.
- Serve warm with your favorite toppings.
