Ingredients:
- 1 large English cucumber, seeded
- 1/2 tsp Kosher salt
- 4 oz softened cream cheese
- 2 tbsp mayonnaise
- 1 tbsp fresh lemon juice
- 1 tbsp fresh dill, finely chopped
- 1/4 tsp garlic powder
- 0.5g white pepper
- 8 slices white sandwich bread
- 2 tbsp unsalted butter, softened
Instructions:
- Use a mandoline to cut the cucumber into rounds approximately 1/8 inch (3mm) thick.
- Toss cucumber slices with Kosher salt in a bowl and let them sit for 15–20 minutes to draw out excess moisture.
- Pat each cucumber slice firmly between paper towels to ensure they are dry.
- In a small bowl, beat the softened cream cheese and mayonnaise until smooth.
- Fold in the lemon juice, chopped dill, garlic powder, and white pepper until well combined.
- Trim the crusts off the bread slices using a serrated knife.
- Spread a layer of the herb mixture onto the bread slices, then layer with the dried cucumber rounds.
- Assemble the sandwiches, cut into triangles, and chill for 60 minutes before serving.
