Ingredients:

  • 12 ounces whole cranberries (fresh or frozen)
  • 1 cup monkfruit sweetener (or sweetener of choice)
  • ½ cup water (filtered or spring water preferred)
  • 1 teaspoon vanilla extract
  • ¼ cup orange juice (juice of 1 medium orange)
  • ½ teaspoon orange zest (zest of 1 medium orange)
  • ½ teaspoon salt
  • ⅛ teaspoon ground cinnamon
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon allspice (omit for AIP; substitute with mace if desired)

Instructions:

  1. In a medium sauce pot, combine cranberries, sweetener, water, vanilla extract, orange juice, orange zest, salt, and spices.
  2. Heat the mixture over medium heat, covering the pot. Allow the cranberries to pop open, which should take about 5 minutes.
  3. Uncover the pot and reduce the heat slightly. Simmer for another 5 minutes, stirring frequently, until the jam thickens.
  4. Once thickened, remove from heat and let the jam cool to room temperature.
  5. Transfer the cooled jam into covered containers or mason jars for storage.
