Ingredients:
- 2 cups (240g) superfine almond flour
- 1/4 cup (30g) coconut flour
- 1/2 cup (100g) granulated monk fruit sweetener
- 1 tbsp (8g) pumpkin pie spice
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1 cup (245g) canned pumpkin puree (unsweetened)
- 2 large eggs
- 1/4 cup (60ml) melted unsalted butter
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese, softened
- 4 tbsp (55g) unsalted butter, softened
- 1/2 cup (60g) powdered monk fruit sweetener
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large bowl, whisk together the almond flour, coconut flour, granulated monk fruit sweetener, pumpkin pie spice, baking soda, and salt.
- Stir in the pumpkin puree, eggs, melted butter, and vanilla extract until the batter is smooth.
- Spread the batter evenly into the prepared pan using a spatula.
- Bake for 22–25 minutes until the edges are golden brown and the center springs back lightly when touched.
- Allow the bars to cool completely in the pan on a wire rack.
- Beat the softened cream cheese and softened butter until velvety; gradually add powdered monk fruit sweetener and vanilla extract.
- Spread the frosting in a thick, even layer over the cooled bars.
- Chill in the fridge for 30 minutes to set the frosting before slicing into 16 bars.
