- 2 large eggs
- 1.5 cups almond flour
- ¼ cup golden flax meal
- 1 teaspoon baking soda
- ½ teaspoon xanthan gum (optional)
Instructions:
- Preheat the Oven: Set to 400°F (200°C) and line one or two baking sheets with parchment paper.
- Melt Cheese: In a large microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 20 seconds; stir and check. Continue in 10-second intervals until fully melted and smooth.
- Combine Wet Ingredients: Allow the cheese mixture to cool slightly, then add the eggs. Stir until thoroughly blended (use a fork for ease).
- Mix Dry Ingredients: In a separate bowl, whisk together almond flour, golden flax meal, baking soda, and xanthan gum (if using).
- Combine Mixtures: Add the dry mixture to the cheese mixture. Fold until a sticky, thick dough forms.
- Shape the Dough: Divide into 8 equal portions and shape each into a ball. Place each ball between two sheets of parchment and roll to approximately 4 inches in diameter and ¼ inch thick.
- Bake: Place the rolled dough pieces on the lined baking sheets. Bake for 15 minutes, or until the tops are slightly golden.
