  • 2 large eggs
  • 1.5 cups almond flour
  • ¼ cup golden flax meal
  • 1 teaspoon baking soda
  • ½ teaspoon xanthan gum (optional)

Instructions:

  1. Preheat the Oven: Set to 400°F (200°C) and line one or two baking sheets with parchment paper.
  2. Melt Cheese: In a large microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 20 seconds; stir and check. Continue in 10-second intervals until fully melted and smooth.
  3. Combine Wet Ingredients: Allow the cheese mixture to cool slightly, then add the eggs. Stir until thoroughly blended (use a fork for ease).
  4. Mix Dry Ingredients: In a separate bowl, whisk together almond flour, golden flax meal, baking soda, and xanthan gum (if using).
  5. Combine Mixtures: Add the dry mixture to the cheese mixture. Fold until a sticky, thick dough forms.
  6. Shape the Dough: Divide into 8 equal portions and shape each into a ball. Place each ball between two sheets of parchment and roll to approximately 4 inches in diameter and ¼ inch thick.
  7. Bake: Place the rolled dough pieces on the lined baking sheets. Bake for 15 minutes, or until the tops are slightly golden.
