Instructions:
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine strawberries with sugar, cornstarch, vanilla extract, and lemon juice.
- Toss until strawberries are well coated, then spread into the baking dish.
- In another bowl, whisk flour, baking powder, and salt together.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Stir in milk until just combined, being careful not to overmix.
- Drop spoonfuls of biscuit dough over the strawberry filling, ensuring some fruit is visible.
- Sprinkle the remaining tablespoon of sugar over the top.
- Place in the preheated oven and bake for 35-40 minutes or until the topping is golden and the filling is bubbly.
- Cool slightly before serving.
