Ingredients:
- 4 medium carrots, shredded (about 2 cups / 240g)
- 1 red bell pepper, thinly sliced
- 1/2 small red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup unsalted roasted peanuts, chopped (optional)
- 3 tablespoons lime juice (about 1-2 limes)
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 tablespoon honey (or maple syrup for vegan)
- 1 teaspoon chili paste (adjust for desired spiciness)
- Salt and pepper to taste
Instructions:
- Shred carrots using a grater or food processor. Slice the bell pepper and chop the onion and cilantro.
- In a small mixing bowl, whisk together lime juice, olive oil, soy sauce, honey, chili paste, salt, and pepper until well combined.
- In a large bowl, combine shredded carrots, bell pepper, onion, and cilantro.
- Pour the dressing over the salad mixture and toss gently to coat.
- Top the salad with chopped peanuts if desired and serve immediately or chill for 10 minutes to enhance flavors.
