Ingredients:

  • 4 medium carrots, shredded (about 2 cups / 240g)
  • 1 red bell pepper, thinly sliced
  • 1/2 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup unsalted roasted peanuts, chopped (optional)
  • 3 tablespoons lime juice (about 1-2 limes)
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey (or maple syrup for vegan)
  • 1 teaspoon chili paste (adjust for desired spiciness)
  • Salt and pepper to taste

Instructions:

  1. Shred carrots using a grater or food processor. Slice the bell pepper and chop the onion and cilantro.
  2. In a small mixing bowl, whisk together lime juice, olive oil, soy sauce, honey, chili paste, salt, and pepper until well combined.
  3. In a large bowl, combine shredded carrots, bell pepper, onion, and cilantro.
  4. Pour the dressing over the salad mixture and toss gently to coat.
  5. Top the salad with chopped peanuts if desired and serve immediately or chill for 10 minutes to enhance flavors.
