Ingredients:

  • 1 (14-ounce) can sweetened condensed milk (397g)
  • 1 ½ cups ice water (355 ml)
  • 1 (3.4-ounce) package instant vanilla pudding mix (96g)
  • 3 cups heavy cream (710 ml)
  • ½ teaspoon pure vanilla extract (2.5 ml)
  • 1 (12-ounce) box vanilla wafers (approximately 454g)
  • 4-5 ripe bananas, sliced (approximately 600-750g)

Instructions:

  1. Whisk together the sweetened condensed milk and ice water in a large bowl until well combined.
  2. Add the instant vanilla pudding mix to the sweetened condensed milk mixture and whisk until smooth. Let stand for a few minutes to thicken slightly.
  3. In a separate bowl, beat the heavy cream with an electric mixer until stiff peaks form. Gently fold in the vanilla extract.
  4. Gently fold the whipped cream into the pudding mixture until just combined. Do not overmix.
  5. Line the bottom of the baking dish with a layer of vanilla wafers. Top with a layer of sliced bananas, followed by a layer of the pudding mixture.
  6. Repeat the layers (wafers, bananas, pudding) until all ingredients are used, ending with a layer of pudding on top.
  7. Cover the dish with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the wafers to soften and the flavors to meld.
  8. Spoon the pudding into individual bowls and serve chilled.
