Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (30 ml)
  • 8 oz. cream cheese, softened (227 g)
  • ½ cup grated cheddar cheese (50 g)
  • 1 tablespoon fresh chives, chopped (or 1 teaspoon dried chives)
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 4 slices of your favorite bread (e.g., ciabatta, sourdough, or whole grain)
  • Lettuce leaves, for garnish
  • Tomato slices, optional
  • Pickles, optional

Instructions:

  1. Season the chicken breasts with garlic powder, paprika, salt, and pepper. Heat olive oil in the grill pan over medium-high heat.
  2. Grill the chicken for 6-7 minutes on each side, or until cooked through (internal temperature should reach 165°F / 74°C). Remove from heat and let rest for 5 minutes before slicing.
  3. In a mixing bowl, combine softened cream cheese, grated cheddar, chopped chives, lemon juice, salt, and pepper. Whisk until smooth and well combined.
  4. Toast the bread lightly if desired. Spread a generous layer of the creamy cheese mixture on one slice of bread. Add sliced grilled chicken, lettuce, and optional tomato slices or pickles. Top with the second slice of bread.
  5. Cut in half and serve immediately.
