Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons olive oil (30 ml)
- 8 oz. cream cheese, softened (227 g)
- ½ cup grated cheddar cheese (50 g)
- 1 tablespoon fresh chives, chopped (or 1 teaspoon dried chives)
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- 4 slices of your favorite bread (e.g., ciabatta, sourdough, or whole grain)
- Lettuce leaves, for garnish
- Tomato slices, optional
- Pickles, optional
Instructions:
- Season the chicken breasts with garlic powder, paprika, salt, and pepper. Heat olive oil in the grill pan over medium-high heat.
- Grill the chicken for 6-7 minutes on each side, or until cooked through (internal temperature should reach 165°F / 74°C). Remove from heat and let rest for 5 minutes before slicing.
- In a mixing bowl, combine softened cream cheese, grated cheddar, chopped chives, lemon juice, salt, and pepper. Whisk until smooth and well combined.
- Toast the bread lightly if desired. Spread a generous layer of the creamy cheese mixture on one slice of bread. Add sliced grilled chicken, lettuce, and optional tomato slices or pickles. Top with the second slice of bread.
- Cut in half and serve immediately.
