Ingredients:

  • ½ cup canned pumpkin puree
  • 2 tablespoons vegetable oil or melted butter
  • ¼ cup maple syrup or honey (optional for painting)
  • Natural food coloring or cocoa powder for altering color

Instructions:

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In another bowl, whisk milk, egg, pumpkin puree, and vegetable oil until smooth.
  3. Pour wet ingredients into the dry ingredients and mix gently until just combined; do not overmix.
  4. Heat a griddle or skillet over medium heat and lightly grease it.
  5. Pour ¼ cup of batter for each pancake onto the hot griddle and cook for about 2-3 minutes until bubbles form.
  6. Use squeeze bottles or piping bags filled with syrup and food coloring mixtures to create fun designs on the pancake.
  7. Flip pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  8. Stack pancakes on plates and serve warm.
