  1. Prepare the Mango Purée: Dice one of the mangoes. Place in a blender with 1 tablespoon of maple syrup (if needed) and process until perfectly smooth. Set aside.
  2. Mix the Chia Base: In a medium mixing bowl, thoroughly whisk together the coconut milk, plant milk, remaining maple syrup, vanilla extract, and salt.
  3. Add Chia Seeds: Gradually whisk in the chia seeds until fully incorporated, ensuring there are no clumps forming at the bottom.
  4. The Essential Stir: Let the mixture sit undisturbed for 5 minutes. Use the whisk or a spatula to vigorously stir the mixture again to prevent the seeds from clumping.
  5. Chill: Divide the mixture evenly into 4 jars or bowls. Cover and refrigerate for a minimum of 4 hours, or ideally overnight, until the pudding has thickened.
  6. Layer and Serve: Once chilled, layer the pudding: start with a layer of the mango purée, followed by the set chia pudding, another layer of purée, and finally top with the remaining fresh mango (diced) and a scattering of toasted coconut flakes.
