Ingredients:

  • 4 cups (500g) All-Purpose Flour, plus extra for dusting
  • 1 teaspoon (5g) Baking Soda
  • 1 teaspoon (6g) Salt
  • 2 tablespoons (25g) Granulated Sugar (Optional)
  • 1 ¾ cups (415ml) Buttermilk, cold
  • 2 tablespoons (30g) Unsalted Butter, melted (for brushing)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
  2. In a large bowl, whisk together the flour, baking soda, salt, and sugar (if using).
  3. Make a well in the center of the dry ingredients and pour in the buttermilk.
  4. Gently mix the ingredients until just combined. The dough should be shaggy and slightly sticky. Avoid overmixing!
  5. Turn the dough out onto a lightly floured surface. Gently form it into a round loaf, about 1.5-2 inches thick.
  6. Place the loaf on the prepared baking sheet. Using a sharp knife or dough scraper, cut a deep cross into the top of the loaf. The cuts should be roughly 1/2 inch deep.
  7. Bake for 30-35 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
  8. Remove from the oven and brush the top with melted butter.
  9. Let the bread cool on a wire rack for at least 15 minutes before slicing and serving.
