Ingredients:

  • 4 (6 oz / 170g) cod fillets, skinless
  • 1 tablespoon / 15ml olive oil
  • 1 lemon, juiced
  • Salt and freshly ground black pepper to taste
  • 1 cup / 80g panko breadcrumbs
  • 1/4 cup / 60ml chopped fresh parsley
  • 1/4 cup / 60ml chopped fresh oregano (or 1 tablespoon dried oregano)
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 1/4 cup / 60ml grated Parmesan cheese (optional)
  • 2 tablespoons / 30ml olive oil
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
  2. Place cod fillets on the prepared baking sheet. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  3. In a small bowl, combine panko breadcrumbs, parsley, oregano, garlic, lemon zest, Parmesan cheese (if using), olive oil, and red pepper flakes (if using). Mix well.
  4. Evenly distribute the breadcrumb mixture over the cod fillets, gently pressing to adhere.
  5. Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork, and the crust is golden brown.
  6. Serve immediately.
