Ingredients:
- 4 (6 oz / 170g) cod fillets, skinless
- 1 tablespoon / 15ml olive oil
- 1 lemon, juiced
- Salt and freshly ground black pepper to taste
- 1 cup / 80g panko breadcrumbs
- 1/4 cup / 60ml chopped fresh parsley
- 1/4 cup / 60ml chopped fresh oregano (or 1 tablespoon dried oregano)
- 2 cloves garlic, minced
- Zest of 1 lemon
- 1/4 cup / 60ml grated Parmesan cheese (optional)
- 2 tablespoons / 30ml olive oil
- Pinch of red pepper flakes (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
- Place cod fillets on the prepared baking sheet. Drizzle with olive oil and lemon juice. Season with salt and pepper.
- In a small bowl, combine panko breadcrumbs, parsley, oregano, garlic, lemon zest, Parmesan cheese (if using), olive oil, and red pepper flakes (if using). Mix well.
- Evenly distribute the breadcrumb mixture over the cod fillets, gently pressing to adhere.
- Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork, and the crust is golden brown.
- Serve immediately.
