Ingredients:
- 2 cups tomatoes, chopped
- 2 cups cucumber, chopped
- ½ cup pitted green olives, chopped
- 2 green onions, thinly sliced
- ¼ cup parsley, coarsely chopped
- ½ cup feta cheese, crumbled
- 2 tablespoons fresh herbs, optional
- ½ teaspoon salt, plus more to taste
- ⅛ teaspoon black pepper, plus more to taste
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Mediterranean seasoning
Instructions:
- In a small bowl, combine lemon juice, olive oil, and Mediterranean seasoning. Whisk until thoroughly mixed.
- Coarsely chop the parsley and any additional fresh herbs. Thinly slice the green onions. In a large mixing bowl, combine chopped tomatoes, cucumbers, olives, green onions, parsley, and feta.
- Add the dressing to the salad mixture. Season with salt and black pepper to taste. Gently toss to coat the salad evenly with the dressing.
- Sample the salad and adjust seasoning with additional salt and pepper as needed.
