Ingredients:

  • 2 cups tomatoes, chopped
  • 2 cups cucumber, chopped
  • ½ cup pitted green olives, chopped
  • 2 green onions, thinly sliced
  • ¼ cup parsley, coarsely chopped
  • ½ cup feta cheese, crumbled
  • 2 tablespoons fresh herbs, optional
  • ½ teaspoon salt, plus more to taste
  • ⅛ teaspoon black pepper, plus more to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Mediterranean seasoning

Instructions:

  1. In a small bowl, combine lemon juice, olive oil, and Mediterranean seasoning. Whisk until thoroughly mixed.
  2. Coarsely chop the parsley and any additional fresh herbs. Thinly slice the green onions. In a large mixing bowl, combine chopped tomatoes, cucumbers, olives, green onions, parsley, and feta.
  3. Add the dressing to the salad mixture. Season with salt and black pepper to taste. Gently toss to coat the salad evenly with the dressing.
  4. Sample the salad and adjust seasoning with additional salt and pepper as needed.
