Ingredients:

  • 3 ripe bananas, mashed
  • ½ cup vegetable oil
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 ½ cups all-purpose flour
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease the loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add oil, sugar, eggs, and vanilla extract to the mashed bananas. Mix until combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. If using, gently fold in walnuts or chocolate chips.
  7. Pour the batter into the prepared loaf pan, smoothing the top.
  8. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
