Ingredients:

  • 3 large Firm Baking Apples (approx. 600g), peeled, cored, and diced
  • 1 Tbsp Fresh Lemon Juice
  • 2 tsp Ground Cinnamon
  • ½ tsp Ground Nutmeg
  • 2 cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • ½ tsp Fine Sea Salt
  • 1 cup Granulated Sugar
  • ¾ cup Light Brown Sugar (Packed, for batter)
  • ¾ cup Neutral Vegetable Oil (e.g., Canola)
  • 3 large Eggs (Room temperature)
  • 1 tsp Vanilla Extract
  • ¼ cup Milk (Whole milk preferred)
  • ½ cup Light Brown Sugar (Packed, for glaze)
  • 2 Tbsp Unsalted Butter (for glaze)
  • ¼ cup Milk (for glaze)
  • ½ tsp Vanilla Extract (for glaze)
  • 1 cup Powdered Sugar, sifted (for glaze)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour the Bundt pan thoroughly.
  2. Peel, core, and dice the apples into ½-inch chunks. Toss them immediately with the lemon juice, cinnamon, and nutmeg in a medium bowl. Set aside.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, and salt until well combined.
  4. In the bowl of a stand mixer, combine the granulated sugar, brown sugar, and vegetable oil. Beat on medium speed for 2-3 minutes until the mixture is lightened and fully emulsified.
  5. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract. Scrape down the sides of the bowl.
  6. Reduce mixer speed to low. Add half of the flour mixture, mixing just until streaks disappear. Add the milk and mix briefly. Add the remaining flour mixture and mix until just combined—do not overmix.
  7. Gently fold the prepared, spiced apples into the batter using a rubber spatula. Ensure they are evenly distributed.
  8. Spoon the batter into the prepared pan, spreading it evenly.
  9. Bake for 55–60 minutes. Test for doneness: a wooden skewer inserted into the center should come out clean. If needed, loosely tent the cake with foil for the last 15 minutes to prevent over-browning.
  10. Let the cake cool in the pan for 15 minutes before carefully inverting it onto a wire rack to cool completely.
  11. Prepare the Glaze: In a small saucepan, combine the brown sugar, butter, and milk. Bring to a simmer over medium heat, stirring until the sugar dissolves. Remove from heat and stir in the vanilla extract.
  12. Finish the Glaze: Gradually whisk in the sifted powdered sugar until smooth and slightly thick.
  13. Once the cake is completely cool, drizzle the glaze generously over the top and allow it to set for 15 minutes before slicing.
