- 15 oz pumpkin puree
- 2 large eggs
- 1/2 cup neutral oil
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 2 teaspoons pumpkin pie spice
- 1 cup semi-sweet chocolate chips
Instructions:
- Preheat your oven to 325°F (165°C). Grease a 9x5 inch loaf pan and line it with a parchment paper sling for easy removal.
- In a large mixing bowl, whisk together the pumpkin puree, eggs, oil, brown sugar, granulated sugar, and vanilla extract. Whisk vigorously for approximately 60 seconds until the mixture is glossy and sugars begin to dissolve.
- Sift the all-purpose flour, baking soda, salt, and pumpkin pie spice directly over the wet pumpkin mixture.
- Using a silicone spatula, begin to fold the ingredients together. When only a few streaks of flour remain, add the semi-sweet chocolate chips.
- Continue folding just until no dry flour is visible. Avoid overmixing to maintain a tender crumb.
- Transfer the batter into the prepared loaf pan. Bake for 60 minutes or until a skewer inserted into the center comes out clean.
