Ingredients:
- 3 very ripe bananas, mashed (approximately 1 ½ cups / 340g)
- ½ cup (1 stick / 113g) unsalted butter, melted and cooled slightly
- ¾ cup (150g) granulated sugar
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 ½ cups (192g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup (60g) chopped walnuts or pecans (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the loaf pan.
- Mash the bananas in a large mixing bowl until smooth.
- Add the melted butter, sugar, egg, and vanilla extract to the mashed bananas and whisk until well combined.
- In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Gently fold in the chopped nuts (if using).
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean or with a few moist crumbs.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
