Ingredients:
- 10 oz (285g) Goat Cheese, softened
- 4 oz (115g) Full-fat Cream Cheese, softened
- 1 tbsp (15ml) Honey or Agave Nectar
- 1 tsp (2g) Fresh Orange Zest
- 1/4 tsp (1.5g) Sea Salt
- 1/2 cup (65g) Pecans, very finely chopped
- 1/2 cup (60g) Dried Cranberries, minced
- 1/4 cup (15g) Fresh Flat-leaf Parsley, finely chopped
Instructions:
- In a medium glass mixing bowl, combine the softened goat cheese, cream cheese, honey, orange zest, and sea salt. Use a silicone spatula to fold and press the ingredients together until the mixture is completely smooth and monochromatic, resembling a thick, pale frosting.
- Use a small 1-tablespoon cookie scoop to portion the mixture into 24 spheres. Place them on a parchment-lined baking sheet. Chill in the refrigerator for 20–30 minutes until the fats have stabilized and the balls feel firm to the touch.
- On a large plate, mix the finely chopped pecans, minced cranberries, and parsley. Roll each chilled cheese ball in the mixture, pressing gently to ensure the surface is fully encrusted with no white cheese showing through.
