Ingredients:
- 1.5 cups (180g) super-fine almond flour
- 3 tbsp (42g) melted unsalted butter
- 2 tbsp (24g) powdered monk fruit sweetener
- 1/4 tsp (1.5g) salt
- 1/2 tsp (2g) ground cinnamon
- 8 oz (225g) full-fat cream cheese, softened
- 1/2 cup (115g) powdered monk fruit sweetener
- 1/2 cup (120g) pumpkin puree (unsweetened)
- 1/2 cup (120ml) heavy whipping cream, chilled
- 1 tsp (5g) pumpkin pie spice
- 1 tsp (5g) vanilla extract
Instructions:
- In a medium bowl, stir together the almond flour, melted butter, monk fruit, salt, and cinnamon until the mixture resembles wet sand.
- Pour the mixture into a 9-inch pie dish. Using the bottom of a flat measuring cup, press the dough firmly into the bottom and up the sides of the dish.
- Place the crust in the freezer for 10 minutes to firm up.
- Beat the softened cream cheese and powdered monk fruit on medium-high until smooth and fluffy (about 2 minutes).
- Stir in the pumpkin puree, vanilla extract, and pumpkin pie spice. Mix until the color is uniform.
- In a separate bowl, whip the chilled heavy whipping cream until stiff peaks form, then gently fold the whipped cream into the pumpkin mixture.
- Pour the filling into the prepared crust and smooth the top with a rubber spatula.
- Refrigerate for at least 6 hours or overnight to set completely.
