Ingredients:

  • 15 oz (425 g) ricotta cheese
  • 2 cups (200 g) shredded mozzarella cheese
  • ½ cup (50 g) grated Parmesan cheese
  • 1 large egg
  • 1 tsp (5 g) salt
  • ½ tsp (2 g) black pepper
  • 3 cups (720 ml) marinara sauce
  • 2 cups (200 g) fresh spinach
  • 9-12 no-boil lasagna noodles
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. In a medium bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, egg, salt, and pepper. Mix until well combined and smooth.
  2. Spread a thin layer of marinara sauce on the bottom of the baking dish. Place a layer of no-boil lasagna noodles on top of the sauce.
  3. Spread half of the cheese mixture over the noodles, add a layer of spinach, followed by another layer of marinara sauce.
  4. Repeat the layers (noodles, cheese mixture, spinach, marinara) until you run out of ingredients, finishing with marinara on top.
  5. Cover with plastic wrap and refrigerate for at least 30 minutes to set.
  6. Remove from the fridge, slice, and garnish with fresh basil leaves if desired. Enjoy!
