Ingredients:

  • 24 Oreo cookies, crushed (about 300g)
  • 1/2 cup unsalted butter, melted (115g)
  • 8 oz cream cheese, softened (225g)
  • 1/2 cup powdered sugar (60g)
  • 1/2 teaspoon vanilla extract
  • 1 cup whipped topping (such as Cool Whip) (240ml)
  • 1 cup semi-sweet chocolate chips (175g)
  • 1/2 cup heavy cream (120ml)

Instructions:

  1. Line the bottom of a 9x9 inch baking pan with parchment paper.
  2. Combine crushed Oreos and melted butter in a bowl. Stir until well combined and crumbly, then press into the bottom of the prepared pan to form a firm crust.
  3. In a separate bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract; mix until combined. Gently fold in the whipped topping until the filling is light and airy.
  4. Spread the cream cheese filling evenly over the Oreo crust and smooth the top with a spatula.
  5. Cover and refrigerate for at least 30 minutes to set.
  6. Heat heavy cream in a double boiler or microwave until just simmering. Pour hot cream over chocolate chips, let sit for 1 minute, then stir until smooth.
  7. Pour the chocolate ganache over the set filling, spreading evenly. Chill again for an additional 15 minutes to allow the ganache to firm up.
  8. Cut into 12 bars and serve chilled.
